Irish Soda Bread



I tried something new this weekend. Irish Soda Bread. I'm by no means a baker - I don't have the patience - but this bread is so easy. Since there's no yeast and proofing to wait for, you can have the whole thing done in an hour. And a warm slice on your plate with butter and jam two minutes after that.

Here's what you'll need to make two loaves.

3 cups all-purpose flour
1.5 tsps baking soda
1.5 tsps salt
2 cups buttermilk (or you can use regular milk and add 2 tbsp. of lemon juice to it)
1/2 cup chopped nuts
1/2 cup dried fruit


Preheat oven to 400 degrees.

In a large bowl, mix together your flour, baking soda, and salt.  Add in your fruit and nuts. We were really low on supplies so all I had were cashews and canned pineapple. I would have preferred dried cranberries, but you work with what you have. Add your buttermilk. If you are using milk & lemon juice, let it sit for 10 minutes before adding it to the mixture.

Stir your mixture for a minute or two but don't over mix it. Dust some flour onto the counter or a cutting board and plop your dough down. Form it into a ball and divide it into two parts. Shape each half into a loaf and place it on a baking sheet (dusted with flour if you want). This bread doesn't rise very much so you'll have to decide how tall you want it to be. I think I'll make smaller, higher loaves next time. Cut a cross-hatch or stripes into the top of each loaf to allow for expansion and to ensure the bread bakes evenly.

I had some leftover cashews so I sprinkled them on the top. You could also brush the loaves with melted butter if you wanted to. Put the loaves into the oven and bake for 30 minutes. Insert a toothpick or knife into the centre of each loaf. If it comes out clean your bread is finished baking. Adjust baking time as needed.

Once removed from the oven you have two choices. If you want a crusty loaf, let them cool as they are. If you like your bread softer, wrap each loaf in a damp (not wet) tea towel and leave to cool. I personally like a harder crust but Tom doesn't, so I wrapped them.

At this point you'll want to slice into this beauty and slather it with butter and jam. Or peanut butter. Or cream cheese. Or even guacamole. The options are endless.

This bread was just a little too easy. Dangerously so. Especially since I'm trying to stick to following a Paleo lifestyle. I could see myself baking (and eating) a loaf every day. I'm going to have to start giving it away I think.

Bunny in a Jar


I made a little Easter gift for Tom on the weekend. Nothing outrageous, just something to say, "thinking of you". I saw this idea on a link party this week, but I forgot to pin it, so I don't know who it belongs to. Whoever you are, thank you and take a little bow.


Super simple, you just need a mason jar, some ribbon, and a chocolate bunny that fits in the jar. I emphasis that because the first one I bought was too wide. I tried to shave some chocolate off of his feet - the widest part - but he broke in half. A little temper tantrum followed. (I had fallen off of the stool into the closet trying to get the mason jar so I was already annoyed.) That was my only bunny so the gift idea went out the window. But I had to go out later to get more paint brushes so I picked up another (skinnier) one.


You just add ribbon (or easter grass) to the bottom of the jar, put in your bunny, drop a few chocolate eggs around him, and close the jar. You can then add a ribbon to the outside to fancy it up if you want. The only spring-like ribbon I had on hand was some light green with silver dots. It works though, don't you think?


I like 'im. Sweet and sparkly. And pretty tasty too.

Teddy Bear

No update on the kitchen today. Really, it'd just be about watching paint dry and that's about as exciting as...well, you know.

A couple of weeks ago I mentioned that we were looking after my in laws' dog. Now that I've recovered from the lack of sleep that went along with having him here, I can share some pictures. Because this dog is a cutie. Straight-up, teddy-bear-fluffy, can't-stop-hugging-him cute.


His name is Bosco and he's a Chow Chow. He's also mostly blind so you'll notice that his expression doesn't change much from picture to picture. I'm not sure he even knew I was taking his picture. He just kept walking towards me looking to be petted.

And boy, does he like to be petted. I would spend every morning getting ready for work with the dog pressed against my legs. Every 30 seconds or so he would paw at me, like, "Hey, I'm still here you know. Get to the petting."


He also likes to bark. Not constantly though. Just here and there when you're least expecting it. Like at 3am. I think he wakes up, doesn't know where anyone is, and wants to make sure he's not alone. Even if it means getting yelled at. Negative attention is better than no attention, right?


So he pretty much annoyed me all week (before this I was always begging to have him stay with us), but I forgive him now. He's more than welcome to come back again. For the day. Or maybe a weekend. As long as I can sleep in afterwards.
